Originating in the Daylesford region of Victoria just south of Bendigo is Holy Goat Cheese run by Anne Marie and Carla from their organic farm "Sutton Grange." Holy Goat Organic Cheeses are hand made based on the traditional French soft curd style, using slow lactic acid fermentation. The fresh delicate curds are hand ladled into individual moulds and allowed to drain slowly in their own weight. The Holy Goat artisan cheeses range from fresh to aged, and from ash coated to natural rind, with a variety of shapes, and very distinctive flavor in their Silk, Black Silk, La Luna and Skyla Log ranges.
