Kirsty Silvester and Dave Chapman discovered their passion while visiting Dave’s daughter in Europe. During this time they lived and worked on a farm, learning more about the intricacies of taking care of sheep and, more importantly, learning the intricacies of cheese making. Moving back to New Zealand saw the two free spirits falling in love with sheep-milking and the art of cheesemaking. They welcomed numerous flocks of sheep onto the farm (alongside a few cats, alpacas, cows, chickens and ducks, of course) and with Kirsty’s gift of a cheesemaking kit – the pair set up Wild Bush Cheeses. Now the brand is loved by many and the Wild Bush organic haloumis, feta and pecorino cheeses are sought after by the locals and tourists alike with a few even enjoying the autumn and winter cheesemaking workshops run from the farm.
